Heart Cupcakes for Dogs. Valentine's Day (DIY)

Ingredients

  • 1/2 Cup of Whole grain rice flour
  • 1/2 Cup of coconut oil
  • 1/3 Cup of organic apple puree
  • 1 Egg
  • 2 Tablespoons of Organic Honey
  • 3 Tablespoons of organic plain greek yogurt 
  • 1 Tablespoon of organic honey
  • 100 grams of raspberries
  • 1/3 Cup of water
  • 2 Tablespoons of flavorless gelatin

Utensils

  • 1 medium bowl
  • 1 hand mixer
  • 1 Baking pan
  • 6 Silicone shaped molds
  • 1 Spatula
  • 1 Small heart shaped cookie cutter
  • 1 Blender

Preparation

Apple cupcakes: Batter an egg in a medium sized bowl, then add 1/2 cup of coconut oil, 2 tablespoons of organic honey, 1/3 of organic apple puree and 1/2 of whole grain rice flour. Mix very well. Put the heart shaped molds on the baking pan and lather them with grease, put the mix in each one but only fill them up 3/4 of the way to allow the mix to expand while baking. Bake at 180°C/350°F for about 15-20 mins or until you can insert a knife or tooth pick without it getting any mix on it after retrieving it. Take out of the oven and let the molds cool down. Then take them out of the molds and get ready to decorate.

Raspberry Hearts: For the hearts we'll need to blend the 100 grams of raspberries with 1/3 cup of water. We'll then pour 1/2 cup of the raspberry juice and let it sit at room temperature. Then add 2 tablespoons of the flavorless gelatin and mix, we wait for about a minute for it to dilute properly and then get another 1/2 cup of raspberry juice and heat it up (could be done in a microwave) for 1 minute. When it's really hot we add flavorless gelatin and mix until it dilutes completely. Immediately we put the mixture in a flat recipient, not too thick, more or less 3 millimeters and then refrigerate for 1 hour or until it's completely solid so we can cut out the hearts with the cookie cutter and have them ready for decoration.

Cupcake Topping: For the cupcake topping  we'll take 3 tablespoons of organic plain greek yogurt and add 1 tablespoon of organic honey, mix, and with the help of a spatula we spread it on top of the cupcake and then add the raspberry heart  to the top and we'll be ready to enjoy.

All the decorated cupcakes should be consumed the same day. The cupcakes that are left without the topping can be stored in an air tight recipient for 4-5 days in a cool place. The topping must be stored in a refrigerator.
